Skillet Cherry Pie Thanks to Pearl Teiserskas from Brookfield, Illinois for sharing this recipe!
1/4 c. butter 1/2 c. brown sugar, packed 2 9-inch frozen pie crusts, unbaked 15-oz. can tart cherries, drained 21-oz. can cherry pie filling 1/4 c. sugar 1 T. plus 1/8 t. all-purpose flour 1 to 2 T. milk Garnish: powdered sugar
In a cast-iron skillet, melt butter with brown sugar over medium-low heat. Remove from heat. Place one frozen pie crust in skillet on top of butter mixture; set aside. In a bowl, mix cherries and pie filling; spoon into crust. Mix sugar and flour together in a cup; sprinkle evenly over cherry mixture. Place remaining frozen pie crust upside-down on top of cherry mixture. Brush with milk; cut slits in crust to vent. Bake at 350 degrees for one hour, or until bubbly and crust is golden. Cool; sprinkle with powdered sugar. Serves 8.

Upside-Down Apple-Pecan Pie

We think this combination pecan pie and apple pie is simply outstanding. Bake it in a pretty pie plate that is part of the gift as well! Look below for the complete recipe, from 101 Blue-Ribbon Desserts cookbook.
1/2 c. butter, softened 1-1/2 c. pecan halves 1-1/2 c. brown sugar, packed 2 9-inch pie crusts, unbaked 1/2 c. sugar 2 T. lemon juice 1 t. vanilla extract 3 T. all-purpose flour 1 T. apple pie spice 1-1/8 t. cinnamon 1/2 t. nutmeg 3 c. Honey Crisp apples, peeled, cored and sliced 3 c. Swiss Gourmet apples, peeled, cored and sliced
Spread butter in the bottom and up the sides of a 9" deep-dish pie plate. Arrange pecans over butter, flat-side up, to cover pie plate. Sprinkle brown sugar over pecans. Place one crust on top; press into pie plate. In a large bowl, combine sugar, lemon juice, vanilla, flour and spices; mix well. Add apples; toss until coated. Spoon apple mixture evenly into crust. Add remaining crust. Fold over edges and crimp together; pierce several times with a fork. Bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees; bake for another 45 minutes. Remove from oven; let stand until bubbling stops. While pie is still hot, invert a plate over pie and flip pie over onto plate. Pecans are now on top. Serve warm. Serves 8.
